Super Greens Dressing

 
 
 

This is a wonderful versatile dressing that packs a nutritional punch. This recipe contains a good dose of spinach which is rich in vitamin K, important for blood clotting and wound healing. It also contains nutritional yeast which contains B vitamins like B12 which are important for blood cells and a healthy nervous system.

Most importantly however is that it offers a variety of plant foods in one dressing which our microbes will thank us for.

It is amazing as a typical salad dressing or drizzled over potatoes. It also goes well with meat and fish.

Ingredients

80 ml olive oil

Juice of 2 lemons

2 tbsp of apple cider vinegar

Large handful of spinach leaves

Large bunch of coriander roughly chopped

2 garlic gloves, chopped

50g cashew nuts

15g nutritional yeast

1 tsp salt

Method

Add all your ingredients to a blender and blitz until smooth. Simple. You can make a thinner consistency by reducing the amount of cashew nuts. Keep in the fridge in an airtight container for up to 3 days.
